Michelin stars align for Italian chef in Central

Chef Umberto Bombana is in top-class company.

The much-watched Michelin restaurant guide has endowed his Central restaurant, 8 1/2 Otto e Mezzo Bombana, with three stars, the first Italian eatery outside of Italy to achieve the exceptional grading.

'It's a dream come true,' Bombana, an 18-year veteran of Hong Kong, said.

The new suites borrow from a minimalist palette of whites, blondes and dark oak to create a serene but savvy urban sanctuary. What have you been up to since the demise of Toscana? 'Besides consulting for a Beijing group and doing the promotion [of white truffles from Alba], I helped Roland Schuller open The Drawing Room [in Causeway Bay]. We just got our first Michelin star. [Schuller is Swiss] and he's lived and worked in Italy. A similar appreciation for food brought us together.
