There are several exciting guest chef promotions coming up in the next couple of weeks, and you should book before they sell out. Max Duley, from Peju Province Winery in the Napa Valley, is guest chef at JW's California at the JW Marriott hotel in Admiralty until March 13. The dishes are available a la carte and there'll be a dinner tomorrow pairing Duley's food with Peju Province wines.

Perfect Match

There are many versions of braised eight treasures duck. The bare essentials are a boneless young duck stuffed with lotus seeds, dried black mushrooms and air-dried meats. The long, slow braising process allows all the flavours to develop and integrate into the duck's rich canvas. The finishing sauce is often a mixture of salted duck eggs and master stock.

A good nose for diversity

VISITORS TO California's Napa Valley may be surprised to see a traditional Chinese-style gate at the entrance to one of the picturesque terraced vineyards that dot the region.

The gate marks the 40-hectare property of Su Hua Newton, whose long and varied career has taken her around the world and included stints as an academic, journalist, doctor and now a renowned winemaker.

The entrance fee of $78 ($68 if you book today) allows guests to taste more than 100 wines from various importers including Jebsen, Remy, Ponti and Riche Monde.

No dust at Napa sale

I once thought a wine auction meant standing in the confines of a dimly-lit room bidding for a bunch of dust-covered, cobweb-encrusted bottles with yellowing labels.

Nothing could be further from the truth.

'Darling,' teased the winemaker, in a voice too loud. 'Don't you know? There is no dust in Napa.' It soon became as crystal clear as a crisp chardonnay.

Wild Horse Chardonnay 1990

THIS year's Sunday Morning Post Award for the Wine of the Fair at the Wines of the Pacific Rim Festival went to an outsider with a pedigree little known in Hongkong.

The wine is not from the recognised Napa or Sonoma areas but from San Luis Obispo on the central Californian coast, about halfway between San Francisco and Los Angeles.
