Recipe: show me the mussels

Mussels with potatoes, peppers and rouille

What bouchot mussels lack in size they more than make up for in taste and tenderness.

Turning the tables

I made a great discovery in a second-hand-book shop recently: a Turkish cookbook with simple recipes that actually work.

Cooking with books

Documenting recipes is one way of preserving them, but it's not one that is encouraged in local culinary culture.

Most Chinese cooks say that exact measurements are not useful and that the only way to learn is by watching. That's why most recipes and techniques are still passed on directly from master to apprentice, mother to daughter.

A feast for the eyes

Dominica Yang is known to be a good cook among her friends, who frequently ask her for her recipes. With one of them, Claudia Shaw d'Auriol, she has collaborated on two cookery books, Delicious and Too Delicious, with proceeds going to charity.

Channel hop

Jamie Oliver's back and cranked up to hyper speed. Britain's one and only baby-faced, wonky-haired food crusader returns to the home kitchen in Jamie's 30 Minute Meals (TLC; Thursdays at 7pm). The concept of whipping up an entire meal in less than half an hour isn't a new one; America's Rachael Ray and Oliver's sultry compatriot Nigella Lawson have been there already.

Foods of the World

Foods of the World By Time Life

This series of books was far ahead of its time. It was published in the 1960s and 70s: a time when food was eaten as sustenance, canned and frozen products were embraced by housewives for making their lives easier and many of the people who consider themselves 'foodies' hadn't even been born.

Chefs cook up a fresh start

When the Teresa New Life Coffee Shop opened in Tsim Sha Tsui early last year, Regina Chu soon became a regular. It was a convenient spot for a bite to eat on the way to work or a short break from her job as director of learning and development at the nearby InterContinental Hong Kong.

Basic ingredient is love

It is not the biggest cooking school in the city but it is the studio with the most heart. 6 Senses threw an intimate holiday gathering on Friday to celebrate moving up from the 13th to the 19th floor of its Wan Chai building and the release later this month of a recipe book.

Cheap and cheerful kitchen capers with all the comforts of home

It seems that just about anyone with knife skills and foolproof recipes is offering cooking courses these days, turning their kitchens into classrooms and their homes into a never-ending dinner party.

In France, the trend has spawned a cottage industry of home-based cooking schools, turning gastronomy into one of the fastest-growing tourism sectors.

Hot source

When people ask for a good online recipe source, I'm always surprised they haven't heard of epicurious.com. Calling itself 'the world's greatest recipe collection' might be stretching it - there are much better sources for Asian cuisines, for instance - but it's still an excellent website.

FOOD & DRINK

This year's gastro guides apply the principles of all good cooks: basic ingredients and simple recipes with a fresh spin. Genna Hayman and Kirstie Rowson win the 'Why Didn't I Think Of That' award for writing The Alternative Hen and The Alternative Stag. They offer ideas from around the world on kick-starting marriages without endangering relationships.
