I love the sweet, salty, tart and pungent flavours and the varied textures of this refreshing, summery salad. The dressing should have just a hint of sesame oil; if you add too much, it will overwhelm.

Give your plain greens a fresh kick from a bottle

McCormick Yuzu & Green Pepper dressing

150ml for HK$30.80, Wellcome

It's a relatively pricey little bottle, but you need just a little to spice up plain greens. The heat from the green pepper gives an unusual kick to a salad.

Verdict: an oil-free dressing that I enjoyed with zero guilt.

Yuzu

Yuzu is an East Asian citrus fruit commonly used in Japanese and Korean cuisine. It has a tart, almost grapefruity flavour, but with a little of the sweetness of mandarin or tangerine.

Root matters

Salsify is an unfamiliar vegetable to most of us. That's because the soft, tender leaves of the root plant are usually referred to on menus as oyster leaf or oyster plant because their taste resembles that of the bivalve. The root also has a faint oyster flavour. There are many varieties of the plant, although not all are eaten.

Dressed to fill

Eating light during the hot and humid months is a good idea theoretically - heavy foods weigh you down and make you feel even warmer. But while you might be tempted to make a whole meal out of salad greens dressed with vinaigrette, it's not very satisfying - you'll probably be hungry again within a couple of hours.

Salad days

Green salads, dressed simply with olive oil and vinegar, just don't appeal to me - they seem too austere. I prefer substantial salads with strong flavours and a decent amount of protein. The following recipes aren't suitable for those on diets but they are hearty enough to satisfy appetites wilted by the summer heat.
