Salad Dressings

Watermelon and tomato salad

I love the sweet, salty, tart and pungent flavours and the varied textures of this refreshing, summery salad. The dressing should have just a hint of sesame oil; if you add too much, it will overwhelm.

Give your plain greens a fresh kick from a bottle

McCormick Yuzu & Green Pepper dressing

150ml for HK$30.80, Wellcome

It's a relatively pricey little bottle, but you need just a little to spice up plain greens. The heat from the green pepper gives an unusual kick to a salad.

Verdict: an oil-free dressing that I enjoyed with zero guilt.

Vitamin-packed salad makes for easy pickings

If you are looking to keep a meal light, and even if you regularly enjoy munching a salad, the idea of a meal consisting mostly of tomatoes might raise a sceptical eyebrow.

The joys of spring

Thanks to international shipping, most produce, wherever its origin, is available year-round in Hong Kong. Nonetheless, it remains a real joy to have true 'spring vegetables' - the youngest, sweetest, freshest and most flavourful produce.

Yuzu is an East Asian citrus fruit commonly used in Japanese and Korean cuisine. It has a tart, almost grapefruity flavour, but with a little of the sweetness of mandarin or tangerine.

Root matters

Salsify is an unfamiliar vegetable to most of us. That's because the soft, tender leaves of the root plant are usually referred to on menus as oyster leaf or oyster plant because their taste resembles that of the bivalve. The root also has a faint oyster flavour. There are many varieties of the plant, although not all are eaten.

Becasse By Justin North

Anyone who's been to seafood and produce markets in Australia should know there is an incredible variety and abundance of ingredients available. With his book, Becasse, Justin North pays homage to his adopted country's food producers, writing that he wants 'to bring out each product's unique qualities as well as demonstrate its versatility'.

Dressed to fill

Eating light during the hot and humid months is a good idea theoretically - heavy foods weigh you down and make you feel even warmer. But while you might be tempted to make a whole meal out of salad greens dressed with vinaigrette, it's not very satisfying - you'll probably be hungry again within a couple of hours.

Salad days

Green salads, dressed simply with olive oil and vinegar, just don't appeal to me - they seem too austere. I prefer substantial salads with strong flavours and a decent amount of protein. The following recipes aren't suitable for those on diets but they are hearty enough to satisfy appetites wilted by the summer heat.

balsamic vinegar

Most of what we think of as balsamic vinegar isn't the real stuff, at least from the view of traditional aceto balsamico makers in Italy.

Two for one

Eclipse Management (Blowfish, Metro Lounge, Caramba) is making the great leap into China and will soon open two restaurants in Shanghai. The group has taken over the existing Ashanti Dome Restaurant in the beautifully preserved St Nicholas Russian Orthodox Church, built in the late 1920s. It will turn the premises into two restaurants.
