Cold comfort

A friend of mine complained about restaurants she visited on a trip to Europe. 'The food is never hot, not even the soups,' she said. By 'hot', she meant blazing hot - the hot you get in Chinese restaurants, where stir-fried food is scooped from a wok and rushed straight to a table.

Where's the fire?

Dragon fruit is dramatic and beautiful. The thick but tender skin - most commonly bright pink (but it can also be purple or yellow) has smooth, large 'scales', which give a clear indication of how the fruit got its name. The juicy flesh, which is dotted with edible black seeds, ranges from white to deep pink.

Perfect match

Although mangoes are primarily a tropical fruit, there are many types grown in many countries. In this part of the world, those from the Philippines are generally regarded as having the most flavour, although the big and beautiful mangoes from Queensland are also popular because they're quite fleshy. But for real taste, you can't get much better than the small 'kidney' mangoes.

Mango, going, gone

The long season for mangoes is winding down; you'll find them intermittently in the markets throughout the winter but not in the great variety we enjoy during the rest of the year. This tropical fruit is fragrant and sweet when ripe - pick specimens that 'give' slightly when gently pressed.

The mangosteen is sometimes called the queen of fruits but, unlike the durian (which is considered the king), most people like the flavour immediately.

What is it? A small fruit with a thick, spongy, reddish-purple shell and a green cap. The flesh inside is soft, sweet and fragrant with a creamy texture.
