Healthy Gourmet: Upper cuts

Argentineans consume an average of 60 kilograms of beef per year; it's an important part of their identity.

Hairstyles of the rich and famous

We have a new contender for Hong Kong's biggest and most outrageously expensive steak.

Morton's in the Sheraton Hotel on Nathan Road, boasts a 24-ounce porterhouse for HK$748, with a 48-ounce double porterhouse for HK$1,496. That's nearly a kilo and a half of meat for just two people.

Steak out

We have a new contender for Hong Kong’s biggest and most outrageously expensive steak award. A totally comprehensive search is hazardous to health and has not been attempted, granted, but up to now it was a safe bet that either Morton’s of Chicago and Ruth’s Chris steakhouse served the biggest hunk of dead cow.

Love me tender

Carnevino, Mario Batali's new Italian steakhouse, has opened its doors in Central. Batali says he wants to introduce Hong Kong to the "pungent steaks that Americans love and the Chinese will dig". He may be surprised to find the style has a long history in the city.

Rare occasions

Almost everyone who likes steak will have a preferred cut and very clear ideas about how they want it cooked - my favourites are the onglet (also known as hanger steak) and the rib-eye cap meat, grilled over coals.

Steak au poivre

This is a French steakhouse favourite that can be made with whichever cut of well-marbled boneless steak you like. The steaks shouldn't be too thick, though, or they'll take longer to cook.

If you want the dish to be less peppery, use only black peppercorns, rather than a mix of black and white, because white peppercorns are hotter.

Barbecued beef is so spicy, even the big cat had a bawl

This Thai dish of charcoal-grilled steak, served thinly sliced with a sauce containing copious amounts of chilli, seems straightforward enough. After all, the steak-and-condiment combination is common in many other world cuisines. However, it is known to Thais by a peculiar name, seua rong hai, or 'crying tiger'.
