Wild mushrooms have a lot more flavour than the cultivated fungi but the season for them is brief. Dried wild mushrooms are expensive but a little goes a long way - about 30 grams is enough to add a lot of flavour to any dish.

Arare treat

Mention rice crackers to someone unfamiliar with the Japanese version and they will picture the throat-choking puffed rice type eaten by dieters. Japanese rice crackers, also called senbei or arare, are delicious and varied.

Perfect Match

Loh mai chi are sweet, chewy balls made of glutinous rice flour with three typical fillings: sweetened red bean paste, black sesame paste or a mixture of sugar, sesame seeds, crushed peanuts and desiccated coconut. The best wine pairing needs to be able to handle the sweet, sticky ball, yet impart some additional flavour.

Pan-fried red bean paste cake (serves five)

Ingredients:

For making the pastry skins:

Flour, 300g

Cornstarch, 40g

Egg yolks, 5 pcs

Water, 600ml

Oil, 40ml

For the filling:

Red bean paste, flattened, 80g

Some extra flour for making flour paste

Some extra oil for pan-frying the cakes

Pudding lover's just deserts

DON'T worry if you have a strong craving for Chinese desserts served at traditional coffee shops or dessert houses, but you cannot understand the Chinese menus pasted on the wall. You can still try the best local desserts if you just learn a couple of phrases.

All you have to remember are a few words such as red (hung) and white (baak) - then learn to say them together.
