How my best-of restaurant lists came off second best

A couple of months ago I received an e-mail from an editor at The Guardian in London, asking me to write two pieces for its website about where to eat in Hong Kong - one on the top 10 high-end restaurants, the other focusing on cheaper places. It's not easy to come up with lists like these.
