There are few cuisines that don't have an all-in-one rice dish as a staple; take risotto in Italy or paella in Spain.
In Asia, few are as popular as Indonesia's nasi goreng, which can be prepared in many ways depending on taste but the simplest is served with an egg, chicken, satay and prawn crackers.
Nasi Goreng (serves one) 4 cups cold cooked rice 1 egg, lightly beaten 2 tbsp oil 4 shallots, sliced 1 clove of garlic, chopped 1 red/1 green chilli, chopped 1 tsp shrimp paste 1 tbsp soy sauce 1 spring onion salt and pepper 4 large prawns, shelled 2 chicken drumsticks 1 egg, fried 2 pork satays prawn crackers Beat the egg and cook in a few drops of oil, whisking all the time to break it up.
Heat remaining oil in wok and cook shallots, garlic, chillis and shrimp paste. Remove with a slotted spoon and cook chicken, pork and prawn. Remove meat.
Return shallot mixture to wok and, turning up the heat, add rice, salt and soy sauce, and mix until warmed through. Place prawns in mixture. Fry egg and serve rice on plate with chicken, pork satay, prawn crackers and spring onion.
