We resist, knowing that good things come to those who wait. Rainbow Seafood has several dishes that we always order. One is 'pissing prawns' (so called because they squirt water) with garlic, salt and pepper. These are impossible to eat without using your hands, not if you are intent on getting out every delicious morsel.
We also love the large clams, steamed with minced garlic, fun see noodles and chopped spring onion. If you prefer you can order scallops or abalone cooked in this manner, but we like the clams the best.
Sometimes in the tanks we see large cuttlefish swimming around - their eyes stare upwards in mute appeal to hungry diners. These molluscs are absolutely adorable (if we had a salt water tank at home we'd rescue one for a pet) but it's never stopped us from ordering one, fried up in a light batter.
We also like sea snails, in pretty brown and white shells. You can have them boiled, or cooked in a clay pot in a very spicy broth.
Don't eat these with anyone who is squeamish - when you finally wrest the snail from its shell it coils around like a spring. It looks rather disgusting, even to our hardened hearts, but we just close our eyes and chew away.
