White asparagus from Europe, grown in a labour-intensive way by covering the plants with soil so they do not get any sunlight, is on the menu at a few places around Hong Kong. The Bostonian in the Hong Kong Renaissance has this seasonal speciality until the end of the month, in such dishes as cajun seafood ragout with asparagus, or in scallop and asparagus thermidor.
