'I'm very multi-culinary, but I do love Italian - pastas, tomato, mozzarella and basil salad. Oh, and I also like roast pigeon. I know that's not Italian, but I just thought of it. I also like a good steak. I was entertained a lot in Japan, and I ate Kobe beef quite often - the flavour is awesome, but it's so rich you can only eat a little bit.

'When I cook I like to make Italian - pastas or Osso Bucco Milanese, especially if I can get it with the marrow inside the bones. I like to roast turkey or chicken with potatoes. I'm Danish so I love potatoes and sandwiches. I sometimes make my own Danish rye bread, which is dark and grainy. It's hard to find all the different grains in Hong Kong, so I use a rye-bread mix from Denmark; it's pre-mixed, all I need to add are water and fresh yeast, and I get a bread that's dark and yummy. The Backenheim Bakery in city'super makes a bread that's very close to Danish rye.

'I like to go to Pier 1 in Jardine House for sandwiches - they're probably the best in Hong Kong. My favourite restaurant overall is Cafe Deco. It has a nice selection, consistent quality and great ambience, value for money, service and views.'
