CATERING PROVIDES FOOD FOR THOUGHT

One of the challenges the school faced was to find a catering service that could provide food at the school canteen, left, that would do justice to the stunning new campus.

Another was to meet the diverse food preferences of a student body that has 25 nationalities.

'We offer an international Chinese and Western menu,' cafeteria supervisor Joseph Tam said. 'Each day we offer French bread, soup - or fruit juice in warmer weather - and the choice of a Chinese or Western main course as well as salad and a dessert.' Mr Tam, who has a diploma in catering from the Hong Kong Polytechnic, has been a school chef for more than 10 years. He joined the Canadian school last December.

He estimated about half the students purchased their lunches in the canteen, which had seating for 264.

He would like to see that number grow, but he emphasised 'health and nutrition' came first.

'We try to bridge the gap between student satisfaction and parental requirements for nutrition,' Paul Angwin, general manager of Eurest Catering Services, which supplies the school's meals, said.
