After hearing Joane Filler-Varty talk about coffee, making a cup doesn't seem that simple any more.

'People don't realise it, but it takes about five years from the time coffee is planted to get to your cup,' says Joane, who is a coffee connoisseur and culinary expert.

Coming from Seattle, the mecca of coffee in the US, Joane is ideally suited to be a coffee expert. She says there are about 30 types of coffee from different parts of the world.

Like wine, the taste of coffee depends on the soil, temperature, altitude and water.

'Location has a great influence on the way the bean tastes and its characteristics,' she says. 'With this in mind, you can make different blends, and the varieties on offer today are really endless.' Joane believes the coffee explosion in the US in the past five years is due to baby-boomers looking for non-alcoholic drinks and the availability of so many blends.

'Coffee has moved away from the traditional beverage that most people drink to kick-start their day to one that people want to drink throughout the day,' she says, crediting coffee chain Starbucks for playing a great part in raising awareness of quality coffee in the US.
