When James Lockett tells people he works for Maxim's, the first comment they usually make is about fast food.
'It must be the biggest misconception, but when they come to Mezz they realise it could not be further from a fast-food outlet,' said the Australian chef.
Mezz is a new restaurant in the Prince's Building, and represents a fresh chapter for Maxim's Caterers Ltd.
Decorated by New York-based interior designer Robert Clark, its sleek interior, combined with subdued lighting, pale wood and subtle colours, creates an elegant yet relaxed atmosphere, which head-chef James strives to reflect in the menu.
Open just over a month, Mezz has become the new 'in' spot to wine and dine.
'The hardest thing for me to pinpoint is the style of food I cook,' said James, who trained with top European chefs in London and Melbourne.
