Chefs tend not to be a fashionable bunch. We appreciate them instead for their deft garnishing, their mastery of a wok or skillet and their creative use of ingredients. With its open-kitchen layout, however, chefs at Aqua in Central must take care of their appearance. Sweat, stains and grease are unbecoming, so the chefs do their best to keep their uniforms as fresh as the food they serve. 'When it gets busy the heat in the kitchen can be unbearable, and I sweat as much as I would after a long run,' says Wong. 'We're all pretty young here, so most of us care quite a bit about how we look. I don't wear anything fancy to work, because I have to change out of it and into a uniform. I stay away from collared shirts because they need ironing. When I'm working, I just try to be careful with the sauces.'

Hair: 'If I happen to walk past a salon and need my hair cutting, I'll just go in. The last place was down the road from Aqua and I paid $140. I had it dyed brown-red as well, and I cut off my ponytail because it became too hot in the summer.' He uses Rejoice Shampoo twice a day to wash the sweat and food odours from his hair.
