Chez Moi is showcasing the talents of Michelin one-star chef Eric Barbe, who will create a special black truffle menu until February 9. Barbe, who trained under 'Chef of the Century' Joel Robuchon, is chef at the Manoir de Bellerive in Perigord in France. The set menu includes sauted ceps, snails and frogs legs with fresh herb gravy and truffle jus, pan-fried foie gras served in a crispy tart with bacon and truffles, whole fresh Perigord truffles in pastry with port wine sauce, milk-fed veal sweetbreads with truffles and glazed vegetables, and Perigord goat cheese with truffle flavours on a bed of mesclun salad with fresh herbs. If you like the sharp, slightly bitter taste of radicchio, chef Mario Caramella of Grissini at the Grand Hyatt is cooking this vegetable in various ways from February 7 to 28. It can be enjoyed in dishes such as soft polenta with radicchio, mustard fruits and Gorgonzola cheese, pappardelle with pumpkin cream, radicchio and smoked duck breast, and sauted lobster with radicchio, eggplant, celery and raisin caponata. Madison's Restaurant & Bar in Pacific Place has a prix fixe menu available nightly. The three-course menu has five choices for the starter (including roast beef salad with lemon grass and chilli lime dressing or the Madison's Caesar salad), six choices for main course (wild mushroom risotto in truffle and Gorgonzola cream, Dover sole poached in chardonnay with creamy leek and shrimp in chervil sauce, or corn-fed chicken breast filled with spinach, mushrooms and mozzarella with roasted pumpkin and tarragon sauce) and four selections for dessert. CMRG on Wyndham Street has just launched its oyster and champagne terrace. The oyster selection will change with the seasons but currently includes Irish Rock ($25 each), Evening Cove from Canada ($18 each), Californian Kumamotos ($22) and Marenne from France ($25).
