Of the chickens cooked in a Chinese style, he said: 'Without doubt, this is live chicken. The meat tastes fresher. Chinese chickens taste different to Western ones. Chinese chickens are stronger in flavour and the texture is chewier.

'For imported chickens, they may be chunkier but their chicken flavour is not as strong as the Chinese ones - possibly because of different feeds overseas.'

Of the chickens cooked in a Western style, Mr Lau said: 'Both the flavour and the texture of live chickens are richer. You can even sense the change in the texture from different bites.
