With oyster eateries popping up all over the city these days, it's important to know your Belons from your Kumamotos. Currently the best place to get your questions answered is The Repulse Bay, where American 'oyster king' Bill Marinelli is based - until Thursday anyway. Marinelli owns one of the biggest oyster farms in the US, exporting the bivalves to the world. But he is no mere oyster salesman. Trained as a marine biologist, he is a walking oyster encyclopedia. He even knows which species are capable of interbreeding. 'But the most important thing to know about the oyster is its G-spot,' he says saucily. 'If you don't know where the G-spot is, you can spend hours trying to open it.' Speaking of saucy things, Mr Mollusc also refuses to serve his oysters with cocktail sauce. 'One time, a very wealthy man came to dine with his wife, and he happened to order cocktail sauce with his oysters. I did not care how important he was. Never mind that he was drinking a $500 glass of Bordeaux with the oysters [even CitySeen knows it has to be white wine], I was not going to let him ruin his entire meal. I made him swallow a spoonful of cocktail sauce and swig his precious wine right after. I am sure he has never ordered cocktail sauce again after that experience!' It's true. CitySeen has tried it.
