Greg Malouf was born to Lebanese parents in Melbourne, Australia, where he now runs 'contemporary Middle Eastern' restaurant Momo. He lived in Hong Kong from 1985 to 1988, working as a chef at Restaurant 97 in Lan Kwai Fong, before it became Post 97. He is guest chef at Lux for the Lan Kwai Fong Entertainment Group's food festival, which ends today.
When were you last in Hong Kong?
In 2000, doing a similar food festival but for a different restaurant - Cafe des Artistes.
Which restaurants do you like to visit when you're in Hong Kong?
M at the Fringe. It's very consistent. And (owner) Michelle Garnaut writes menus beautifully. I also like getting abused at Luk Yu Teahouse. The environment is so beautiful. The food is good but I like it more because it's a real cultural experience, there are the grumpy old waiters and the spittoons.
Are there any dishes you particularly like to eat in Hong Kong? Roast goose noodle soup, which I adore. There are places in Causeway Bay and Wan Chai, I don't know the addresses but I know them by sight. I eat roast goose noodle soup, drink Tsing Tao beer and hang out. I love the noodle houses, you can get this food in Melbourne, but the hustle and bustle of Hong Kong can't be reproduced anywhere.
What is difficult about doing a stint as guest chef?
