If a peach is ripe and juicy, the best way to enjoy it is on its own, with nothing interfering with the delicate taste and texture. Often, however, the peaches we buy are not so perfect and taste better cooked with a little sugar to bring out the flavour. These recipes are easy and fast, especially the cobbler and flambed peaches.
Peach and raspberry cobbler (pictured)
This is a rustic, homey dessert but the cooking method is a little strange. The ingredients are tossed together in the baking pan then baked to soften the fruit. Then the hot filling is covered with a soft, moist dough. As it bakes, the dough spreads across the fruit filling to make an uneven topping. Serve the cobbler with homemade creme anglaise or vanilla ice-cream. If you prefer, divide the fruit and topping between six baking dishes. It's also delicious made with a combination of nectarines and blackberries.
6 ripe but firm peaches
1 punnet raspberries
50 grams sugar (use more or less depending on the sweetness of the peaches)
The finely grated zest of one lemon
