What is it going to take to get Nobu Matsuhisa to Hong Kong? The Japanese fusion chef to the rich and famous has eponymous restaurants - Nobu, Matsuhisa and Ubon, which is Nobu spelled backwards - in culinary hotspots such as New York, Paris, Milan, London, Tokyo, Los Angeles and Las Vegas. A Hong Kong branch of Nobu was considered but passed over by management at the InterContinental hotel when it was deciding what would replace Plume. Spoon, by Alain Ducasse, eventually won out. Rumours were rife that the Four Seasons hotel would have a Nobu restaurant when it opens next year at the IFC. Unfortunately, William Mackay, the hotel's vice-president and general manager, says there are no plans for a Nobu at the hotel.
