Madison's Restaurant & Bar, which moved recently from Pacific Place in Admiralty to Hutchinson House in Central, will hold a Rosemount wine dinner on Tuesday. The four-course dinner is $488 plus 10 per cent and includes pan-seared spicy pigeon on roasted butternut squash and sour cherry sauce, paired with the Rosemount Hill of Gold Shiraz 2001, baked beef tenderloin and foie gras in puff pastry with caramelised root vegetables, served with the Rosemount GSM 2000, and dessert of layered orange and chocolate parfait with peach sauce, paired with the Penfolds Botrytis Riesling 2000. The four-course dinner includes a tian of lobster and tomato salsa, paired with the Brown Brothers Chardonnay 2003, white bean soup with truffle oil and herbs, served with the Tarrango 2003, while the main course of grilled fillet of beef with portobello mushrooms, black olive tapenade and red shallot sauce is served with the Brown Brothers Patricia Shiraz 2000. It includes Dungeness crab cakes on wild rocket with fried capers and aioli dressing, and ginger-infused carrot soup with spring onion cream. There's a choice for main course of seared John Dory with citrus-scented risotto or pancetta-stuffed lamb loin stuffed with roasted garlic and served with potato and butternut squash gratin. Dessert is chilled chocolate and hazelnut souffle with strawberry compote and raspberry sherbet. The restaurant also has a dozen fresh oysters for $100. Reservations: 2812 2722 Nomads restaurant in Tsim Sha Tsui is temporarily serving Japanese dishes on its buffet, instead of its usual Mongolian barbecue. The promotion runs until September 25, and includes wasabi-grilled chicken, braised pork belly with honey beans and green tea cheesecake.
