Whether it's western food or a taste of the east, the Waldo Cafe and the Prince Seafood Restaurant in Macau's newest casino, the Galaxy Waldo, has both on offer. The casino and hotel opened in July and there are plans for an even larger resort on Cotai, between Taipa and Coloane. The Waldo Cafe serves classic western and Asian dishes, including steamed rice with silver cod and preserved olives (right; $62), braised lamb shank with a red wine sauce and carrot mashed potatoes ($88) and sliced Kobe beef in soup Vietnam style ($128). For dessert, sample the black sesame mousse in a meringue dish ($32). For gourmet Chinese seafood, the Prince Seafood Restaurant serves original dishes incorporating - you guessed it - imported fresh seafood. The restaurant has two VIP rooms and a teppanyaki, sushi and sashimi bar. Specialities include marinated chilled abalone ($588), braised abalone with fish maw and sea cucumber ($298), sea urchin sashimi ($250), steamed chicken with sun-dried seahorse ($128) and a new creation: duck liver and sea urchin on Sichuan green fried rice in a rice flower basket ($180).
