FIFTY COOKS OF five nationalities prepare the hundreds of dishes served daily at Cafe Deco on The Peak, a glass-fronted arc on Hong Kong?s famous Peak.
Deco has hardwood marquetry flooring, heavy U-backed timber chairs and serious cutlery. You eat off tables of khaki granite but paper napkins ? unfortunately ? are standard issue. I had an excellent sushi sampler ($152 for 13 pieces) that included fresh salmon and dark-red tuna nagiri sushi, egg roll, several lengths of a smaller salmon roll and the usual condiments of pickled ginger, wasabi paste and soy sauce. Executive chef Martin Kniss is proud of Deco?s own sushi creation, a cone of top-quality nori containing seared foie gras, mango, avocado and sesame seeds ($138 for two).
The best dish is the heart-stopping view.
