The interview took place at Red Bar + Restaurant in the new wing of the International Finance Centre in  Central. Opened in September, the restaurant is part of the  gym Pure Fitness. The restaurant offers a  set lunch for $168 ( includes a salad and a main course).

Mexicana salad with guacamole

Wong: It's a   refreshing, colourful  summer salad with tomatoes, yellow peppers and guacamole.

Dungeness crab with mango and pasta salad

W: It's   light and refreshing.

Grilled salmon fillet with beetroot and potato

Rating: 4.5/5

W: It's delicious, and  the crust is crispy. The beetroot sauce enhances the  flavour.  It's well presented and the  portion makes a good  lunch.

Chargrilled chicken breast with asparagus and grapefruit salsa

Rating: 3.5/5

W: Slightly over-cooked, but nice and tender.

W: Of the nine desserts, the chocolate mousse and mango cheesecake are the best.

Overall rating: 5/5

W: I like both the  indoor and outdoor settings. The service is good and the food  is consistent.
