John Sarich is the culinary director of Chateau St. Michelle winery in Washington
State and the host of television series Taste of the North West and Best of Taste: Travels with John Sarich. The Croatian chef recently served a wine dinner at the JW Marriott Hotel in Admiralty.
What are your favourite restaurants in Hong Kong? 'Water Margin in Times Square is good and a new restaurant, Fish Bar, at the JW Marriott is great too. It serves the freshest fish, simply prepared, and you can sit next to the pool surrounded by tall buildings. It's like a movie set.'
What are your favourite restaurants in the world? 'It's hard to say - it doesn't have to be expensive. Everyone loves French Laundry in Yountville, California. I also love small, independent, family-run restaurants with chalk-board menus, like those in Florence. Many of them cook from family recipes and are really special.'
What food in Hong Kong would you recommend to visitors? 'I love the dim sum here, like chicken feet and stuffed fish stomach. I usually go for things that look special. There are also wonderful neighbourhood places. Western tourists are often reluctant to go to these places but the food is actually safe and tasty.'
What's the best thing about travelling so much? 'On every trip I pick up new ideas, like the way Chinese chefs make Shanghai noodles. It's really interesting; western chefs would never make pasta that way.'
