Replacing Lan's Steak+ in Central is Selina Restaurant & Bar, which serves Cantonese-French fusion cuisine. Owner Godfrey Yu, who named the restaurant after his mother, is in the construction business and says cooking is his hobby. He has previously owned the (now defunct) Star Anise restaurant in Happy Valley and other restaurants in Singapore. To attain a good blend of the two cuisines, Yu hired two head chefs, Lam Pu-chi and Dimitri Bastiani. They have created a menu that includes steamed abalone slices with peppermint vinaigrette ($240), braised whole lobster stuffed with glutinous rice in saffron sauce ($280), Australian lamb rack with lemongrass ($220), poached salmon in chicken consomme with red capsicum ($190) and lobster gratin with E-fu noodles. There are also set meals such as the Angus lover, which has French onion soup, grilled Angus beef with morel mushroom sauce plus dessert and tea or coffee for $198, and a dim sum lunch (below) for $98.
