Fusion restaurant in Causeway Bay is serving game such as venison, partridge and quail, with dishes available as a six-course ($300 plus 10 per cent) or eight-course ($398) tasting menu. The game is imported from Denmark and Canada, and is cooked into such dishes as rabbit loin tart with mushrooms and sun-dried tomatoes, roast partridge with Chinese cabbage and hen-of-the-wood mushrooms, and grilled venison rack with pak choi, black truffles and braised roasted yam. Yabbies and chardonnay are being featured until the end of March on the menu of Belvedere restaurant at the InterContinental Grand Stanford hotel in Tsim Sha Tsui. Dishes include mousseline of yabbies and scallops with crushed spring peas and light curry beurre blanc, yabby carpaccio with orange pekoe tea sorbet, thyme and shallots, chilled yabbies and baby spring vegetable chaud-froid scented with white truffle, and marinated yabbies and skordalia potato in Chinese steamed buns with barbecue sauce. To complement the dishes, the wine menu includes chardonnays from around the world, such as Chassagne Montrachet 2002, produced by Morey Coffinet (France), Unwooded Chardonnay 2003 by Capel Vale (Australia), and Winemakers Reserve Chardonnay 2001 by Carmen (Chile). Madison's in Central is holding a dinner this evening featuring the wines of Mission Hill in Canada.
