Sauteed sliced beef in oyster sauce (serves four)

STEP 1: Prepare the ingredients.

STEP 2: Mix the beef with a marinade made from the chicken powder and light soy sauce. Stir slowly in the same direction until it blends. This process will make the beef velvety and tender. Blend in some of the oil and marinate for 30 minutes.

STEP 3: Poach the choy sum in salted water, drain and line the serving plate with it. Briefly submerge the beef in medium-hot oil prior to stir-frying, then drain.

STEP 4: Heat the rest of the oil in a medium-hot pre-heated wok. Add the ginger, scallions and shallots and stir several times to release their aroma. Pour in the oyster sauce followed by the rest of the ingredients and seasoning. Add the beef and mix well.

STEP 5: Stir in the cornstarch and water mixture. Cook for another minute until the sauce thickens, and then serve.

STEP 6: Decorate with some of the flower-shaped carrots and the ginger.
