Ingredients: Chicken meat, de-boned, cut into 1.5cm cubes, 250g Peanuts, deep-fried, 100g Ginger, thinly sliced, 10g Green onions, thinly sliced, 20g Garlic, thinly sliced, 10g Egg, 1/2 pc Oil, 80ml Cornstarch, 15g Sauce: Dark soy sauce, 1/3 tablespoon Light soy sauce, 2 tablespoons Salt, 1/2 teaspoon Sugar, 4 teaspoons Shaoxing wine, 2 tablespoons White pepper, to taste Chicken powder, 1/2 teaspoon Chicken stock, 3 tablespoons Other seasoning: Dried chilli, cut into 1-inch sections, 50g Chilli powder, 10g Rice vinegar, 1 tablespoon STEP 1: Prepare the ingredients. Marinate the chicken cubes with one tablespoon of the Shaoxing wine and a little salt and pepper. Then mix the chicken with the egg, cornstarch and one tablespoon of water. STEP 2: Pour 80ml of oil into a wok and heat until the oil is medium-hot. Stir-fry the dried chillies until they change colour and then add the chicken cubes and stir-fry quickly. STEP 3: Add the chilli powder, green onions, ginger and garlic and stir-fry quickly. Add the sauce and, stir-frying at a high heat, combine all the ingredients. STEP 4: Lastly, add the vinegar and then sprinkle with peanuts. STEP 5: Transfer to a plate, garnish and serve.
