Blinding Kee Club patrons with science
Wanted: a food chemist who also likes gourmet cuisine. Kee Club boss Christian Rhomberg and executive chef Gianluigi Bonelli (pictured) are desperately seeking someone to provide them with kitchen 'alchemy'. They have started the search for someone who works in food chemistry to help them create menus and dishes from a more scientific perspective.
'We're setting up a food laboratory,' Rhomberg says. 'We rented a warehouse in the Western District and we want to find a food chemist with a passion for food.'
Chef Bonelli got the idea working at famous international restaurants such as England's The Fat Duck and Spain's El Bulli, where he was inspired by their gastronomic experimentation and innovation. Now he wants to blind his patrons with science too. 'I know everything on the food side but I want someone who can tell me about the chemical reactions in the oven, who understands nutritional value and the health side of ingredients as well as how it digests in the body.'
