Revolving Restaurant

Fried rice with chicken and salted fish is simple and well worth the 22 yuan; the pigeon, at 37 yuan, goes best with warmed Kuei Hua Chen Chiew wine, at 38 yuan a bottle, and thousand-year-old egg, plus seasonal vegetables, at 25 yuan. This is an unpretentious but classy restaurant. Panoramic views of the city are a bonus.

Sek Kei Lo Restaurant

Banks of the Qi River, opposite Fuhua Hotel, Zhongshan

Sek Kei Lo is famed for its  pigeon with plum wine (25 yuan) and is a popular, crowded and happily noisy place, where patrons wander among counters to view culinary choices from across the country. Wines and liquors of all kinds are also on display. A Great Wall  cabernet sauvignon (1999 vintage) costs  68 yuan a bottle. There's a good chance you'll have to take a number and queue, but it will be worth it for the deep-fried tofu with minced meat (15 yuan), and the fried fish (14 yuan).

Zhongshan Guest House  Dim Sum Restaurant

Arrive before 11am for a wide selection of excellent dim sum: fatty pork on the bone with chillies and pumpkin (five yuan); har gau and siu mai (six yuan each); chicken feet in spicy sauce (six yuan); and steamed water chestnuts (five yuan). If you're  in a big group, request a private room off the long lobby leading to the reception where, on a fine morning, the huge windows are flung open and the courtyard air blows through.

Hengxin Restaurant

The perfect time to enjoy this huge tea-house-style restaurant is after a tour of the adjacent Sun Yat Sen Memorial Park. All dim sum dishes, at five or six yuan each, are irresistible. Late in the morning a wide variety of other treats is wheeled out, such as whole suckling pig for 168 yuan. A light sparkling wine, good for midday refreshment, is Tian Di No1, at 15 yuan a bottle. Or you can enjoy the local tipple, Haizhu beer, at seven yuan a bottle.

Yi Garden

For an end-of-trip blow- out, spoil yourself with the  'authentic' Huaiyang (or Jiangzhe) cuisine of  Yi Garden.  Try a cold starter of huadiao wine chicken,  followed by a signature dish of shredded bean-curd soup. Main courses run to pork belly on choi sum and fresh mushroom with peach. Between courses, muse on the Suzhou-style fountain garden  or watch the action  in Chef Hou's open kitchen, which will also turn out vegetarian versions of its lip-smackin' dishes.
