Summer provides the perfect excuse to cool down with an ice cream. Outlets have calorie-filled desserts on ice and many are running promotions throughout next month, while others are offering taste buds a new experience with unusual combinations.

Haagen-Dazs ice cream and fresh fruits are paired to make sundaes ($68 each) at the Lobby Lounge (21136051) of the Prince Hotel in Tsim Sha Tsui. Flavours include the Japanese Treasure (azuki, green tea, sesame crispy stick and jelly) and the Roman Prince (panna cotta, tiramisu ice cream, strawberries, kiwi, mango and berries).

Movenpick ice cream and drinks will be available at Cafe on the Park (27382322) at The Royal Pacific Hotel and Towers until September 30. Most are a fruit mix, including Merry Berries ($68), which is a choice of two ice cream flavours with mixed berries, waffles, caramel sauce and chocolate. The Kiddy Wonderland ($38) is a choice of two ice creams with marshmallows, chocolate beans, fresh fruit and strawberry and chocolate sauce. Alternatively, single scoops of ice cream cost $28 and $40 for two scoops.

It's Hawaiian flavours all round at the Eaton Hotel until the end of September. Scoops of sorbet and ice cream cost $26 at the Aroma Coffee Exchange with exotic names for basic flavours, such as Waikiki Beach (raspberry sorbet) and the Big Kahuna (melon ice cream).

In the hotel's Lobby Lounge, scoops with toppings and whipped cream include the Pineapple Hula (banana and pineapple ring, double scoop of ice cream topped with chocolate fudge, nuts and whipped cream, $55), and the more calorie-friendly Hawaiian sunrise (lemon sorbet, $38).

The dessert buffet at Tiffin (2584 7822) at the Grand Hyatt will include a homemade ice cream and sherbet promotion between August 10 and 27. Flavours will include Marsala Zabaglione, Pina Colada sherbet, Bourbon Vanilla and Candied Orange ice cream, as well as ice cream fantasy cups whose names are taken from their shapes - they include spaghetti ice cream, which is passed through a machine with holes so it comes out looking like spaghetti. The buffet costs $180 for an adult and $120 for a child Sunday to Thursday, and another $18 for Friday and Saturday bookings.
