Nobu InterContinental, the Hong Kong branch of Japanese chef Nobu Matsuhisa's (left) eponymous restaurants, will begin taking reservations on December 24. The restaurant, which replaces Yu, has a dining room for 140 guests, a sushi bar for 10 and a private dining room for 12. The menu has many of the chef's signature South American-influenced Japanese dishes, including black cod with miso (HK$268), fresh yellowtail sashimi with jalapeno (HK$180), whitefish tiradito (HK$210), new-style salmon sashimi (above right; HK$160-HK$320), toro tartare with caviar (above left; HK$350), squid pasta (HK$165) and sashimi salad with Matsuhisa dressing (HK$240).
