The Landmark Mandarin Oriental's cushy fine-dining outlet Amber is entertaining a Michelin star guest chef this week. Nicolas Le Bec's eponymous restaurant in Lyon got its prestigious gastronomic ranking only two months after opening. The star chef is here until Saturday to show off his nouveau French creations. 'I love travelling,' Le Bec said. 'It is without doubt the best way of gaining life experience. This is not my first time in Asia, however it is my first time in Hong Kong. It is an exchange I truly looked forward to.' The young whiz is down to earth enough not to let a Michelin star blind him to the joys of other cuisines. 'The best award is to have a full restaurant. Also, in travelling throughout the world in areas where there are no Michelin stars, I recognise that great quality food is available across the world. I'll eat or try everything. I have no prejudice. I remember really enjoying eating jellyfish in Shanghai. As a boy in Brittany, you would never think of eating an animal that can sting you so badly.'
