Don The new Grand Lisboa hotel and casino has a top restaurant to match its glittering facade. Macau's Don Alfonso 1890 is the first branch of the original, which is a Michelin two-starred restaurant in Naples, Italy. Chef Alfonso Iaccarino was in Macau recently to help train the staff, including chef de cuisine Michele Antonio Totaro, who previously worked at The Mistral at the InterContinental Grand Stanford in Tsim Sha Tsui. The new restaurant seats 90 and has two private rooms; one for six guests, the other for 10.

The menu includes tuna scented with rose pepper, broad bean puree and red onion sauce (HK$230), baby squid with peas, fava beans and potatoes in Aglianico sauce (HK$230), angel hair pasta with oysters, green tea infusion and oscietra caviar (HK$450), artisan-made orecchiete with mussels, broccoli and breadcrumbs, served with anchovy colatura and sun-dried tomatoes (HK$220), spaghetti

'Don Alfonso style' (HK$120), linguine with clams and zucchini (left; HK$220), roasted lamb with Mediterranean herbs (HK$350), fish casserole with crustaceans and shellfish (for two, HK$1,200) and sfogliatella (Neapolitan pastry leaves stuffed with cinnamon cream and sour cherries, HK$90). There's also an eight-course tasting menu for HK$1,200, which includes stewed octopus with lentils and escarole, duck breast spiced with star anise, apple puree and Aleatico wine reduction, and dentice (fish) stuffed with thyme, couscous and lemon confit.
