Alain Ducasse will be at Spoon at the InterContinental in Tsim Sha Tsui to host April in Paris dinners of dishes inspired by the chef's restaurants in France. The six-course dinners on April 16 and 17 include foie gras Lucullus with toasted warm Parisian brioche, green asparagus with warm leeks and black truffle condiment, saddle of milk-fed lamb with spring vegetables and garlic-parsley butter and contemporary Vacherin of mango and passion fruit with lemon-vanilla-coconut meringue. Australian chef Paul Millist is guest chef at the Panorama restaurant in the Renaissance Kowloon Hotel in Tsim Sha Tsui until April 14. Crab lovers should check out the 18 crabs dinner buffet at The Atrium in the Hotel Miramar in Tsim Sha Tsui. The chefs, using crabs from Scotland, Japan, the US, Australia, Southeast Asia and Europe, are cooking them into dishes such as wine-marinated crystal crab, steamed Mediterranean crab in whole pumpkin, crab cakes flavoured with thyme, salt-baked Arctic Ocean crab with rosemary and steamed sea bass with Hokkaido crab meat.
