Petrus at the Island Shangri-La in Admiralty is holding two Bordeaux wine dinners this month. The first, on April 16, features the wines of Chateau Talbot, a fourth-growth in the Saint-Julien appellation. The six-course meal includes roasted, stuffed Mediterranean red mullet with crustacean condiment paired with the Chateau Talbot 1983, roasted squab breast dolce-forte with baby beetroot and berry sauce with the vintages 1986 and 1989, and a cheese selection served with the 1953 and the 1982. The dinner is HK$2,880 plus 10 per cent. The dinner on April 26 features three premier grand cru wineries: Chateau Margaux, Chateau Cheval Blanc and Chateau Latour. It's a seven-course affair with dishes such as artisanal pasta with wild fairy ring mushrooms paired with the Chateau Latour 1982, roasted North Sea cod with black truffle and spinach lasagne and lobster coral gravy with the Chateau Cheval Blanc 1990, and grilled baby milk lamb with cocotte of green vegetables and Parma ham with the Chateau Margaux 1990. Pepino's Cucina Italiana at the Novotel Century hotel in Wan Chai has Dover sole on the menu until the end of April. Dishes include Dover sole rolled with asparagus and served with crayfish sauce, pan-fried fillet of Dover sole meuniere with white wine lemon butter sauce and grilled whole Dover sole with new potatoes, sauteed vegetables and hollandaise sauce.
