When most of your customers are millionaires, mixing a cocktail requires premium ingredients. At exclusive members-only club M1NT, bar manager Alan Wu uses liquor most connoisseurs would insist on drinking unadulterated. His Millionaire's Margarita, for example, uses 11/2 shots of Grand Patron Platinum Tequila (a triple-distilled and aged tequila made from selected sweet blue agave plants), mixed with three quarters of a shot of Grand Marnier Cuvee du Cent Cinquantenaire (the brand's 150th anniversary cuvee blended with special reserves of cognac aged up to 50 years) and the requisite large dash of lime juice. At HK$395 a pop, it's not the kind of margarita you'd pour from jugs at sports events or parties. 'Quality is important. Our members and shareholders are all VIPs so I try to think of something that tastes more expensive,' says Wu. 'The secret is to keep the simple flavours and not add too many ingredients.' Most of M1NT's wealthy regulars stick to champagne and expensive spirits by the bottle. But Wu, together with M1NT's London mixologist, has created a more down-to-earth cocktail list using fresh fruit. 'The London cocktails have less fruit but here in Asia we have fruits in season all the time so we use a lot of those,' says Wu, who uses passion fruit seeds to add texture, flavour and colour to the popular Ukrainian Assassin. 'Our cocktails don't have a theme because every drink is unique and has a different gimmick,' Wu says. Another popular choice, the Sugar & Spice, combines pepper with strawberries and champagne, the result of which is a simple but stunning aperitif. If you are not a member, you'll need to befriend one to get into M1NT to sample Wu's cocktails. Be prepared if you have to spring for a round, though; bar bills here can easily hit five figures. Shake well and pour into a flute. Add champagne and sprinkle with freshly ground pepper. Garnish with a half strawberry on the rim of the glass.
