Cuisine: Primarily Cantonese, but the menu has other regional Chinese dishes.

Ambience: The space is large but it seems somewhat cave-like because parts of the main room have low ceilings. Many of the diners seem to be regulars. There's minimal decor and tables are well-spaced.

Price: About HK$225 per person without drinks and before adding 10 per cent service charge.

Pros: The fragrance of the sizzling hot dishes being rushed to other tables made us want to order much more than we could have finished - next time we'll go with a larger group.

Cons: The restaurant can be loud when  it's full.

Recommended dishes: The thousand-year eggs (HK$38), which were served with preserved

ginger, were beautiful with their colour strata of gold, black and shades of grey. The soft, oozing yolks and tender whites made them some of the best pei dan we've tasted - and indeed, the manager confirmed the restaurant uses the same supplier as that of  Yung Kee in Central. Tofu salad (HK$68) wasn't really a salad, although it was refreshing. The block of cool bean curd was topped with pork floss and fried garlic. Banquet-style pork meatballs (HK$25 each) were so soft and delicate we wondered how they held together in the clear broth. The steamed egg white with shrimp and dried scallops (HK$88) is comfort food of tender, moist egg white custard that begs to be eaten

with steamed rice. Steamed garlic prawns with glutinous rice (market price; our dish, above, was HK$244) had fresh sweet prawns whose garlicky juices dripped down into the sticky

rice below.

What else? Larger groups can book the two private rooms. Sky View is a sister restaurant to a private kitchen of the same name.
