The cocktail you choose to drink can reveal a lot about you: a champagne cocktail screams glamour while sipping a Cosmopolitan portrays a sexier image. Cocktails change with fashion, so when a bar reinvents itself the drinks list usually changes to reflect its new image.

At ToTT's (Talk of The Town), at the top of The Excelsior hotel, the boldly coloured interior has been replaced with contemporary hues of bronze, taupe, blue and chocolate as part of a recent makeover. The cocktail menu has, in turn, become a lot more hip, with the introduction of popular ingredients such as pomegranate juice and green tea. At the oval-shaped bar, with its multicoloured stained-glass column, staff are mixing innovative creations devised by the bar team.

Food and beverage director Matthew Thomas says the new cocktail list is 'contemporary, interesting and fun, with Asian influences'. The signature drinks take in the latest trends, fashion and mood of the venue, he says, with an emphasis on presentation, flavour and their being served at the right temperature, which in most cases means suitably chilled.

The Chungking Express (HK$80), for example, fuses Asian flavours of green tea and ginger, while the Pomegranate Cosmopolitan (HK$88) offers an antioxidant twist on the classic. The Tai Tai (HK$158), which mingles champagne with muddled fresh raspberries, raspberry vodka and Chambord, is perfect for shopaholics who want to toast a successful trip round the city's designer boutiques.

Ginger ale, to top up the glass

Shake the green tea, ginger liqueur and rum in a shaker with ice. Strain over crushed ice in a tall glass. Top up with ginger ale.

4 shots pomegranate juice

11/2 shots vodka

11/2 shots Cointreau

11/2 shots fresh lime juice

Shake the ingredients together with ice and pour into a chilled martini glass.
