Matsutake is Japanese for 'pine mushroom', so called because it is usually found at the foot of

pine trees.

What is it? A type of large, edible mushroom that, like white and black truffles, has a symbiotic relationship with the tree it grows near. Although it's called a pine mushroom, it can sometimes be found growing at the base of other types of tree. Connoisseurs say the mushroom takes on the flavour of the tree above it. The matsutake grows in Japan, parts of China, North and South Korea, the US, Europe and Mexico.

When is it in season? Primarily in the autumn.

What to look for? When foraging for matsutakes, search under piles of leaves or pine needles and look for mounds at the base of the tree. If purchasing mushrooms, they should be firm - soft spots indicate the presence of worms. If the caps are closed, partially covering the stem, you will see why the mushroom is known as an aphrodisiac. The flavour and aroma of these matsutakes will be milder than those with an open cap.

How is it available? Fresh and dried.
