Cuisine: Hotpot
Ambience: This is one of the new breed of hotpot restaurants - clean, with comfortable, cushy booths, tolerable noise level and an attempt at decor.  The food is presented nicely, not just thrown on a plate, and the menu lists some upmarket ingredients, such as foie gras and Wagyu beef. It was quiet on a weeknight but gets busier on weekends.
Price: About HK$250 per person without drinks and before adding the service charge.
Pros: You get to mix your own sauce, adding ingredients such as diced chillies, fresh or fried garlic, spring onions and chilli oil to individual bowls of soy sauce. The air con was set on arctic when we arrived but the servers quickly complied with our request to  raise the temperature. Soup bases - a selection of 15 - are made without MSG.
Cons: The sliced  geoduck (HK$155) was served with soy sauce and wasabi, in case you  want to eat it as sashimi, but it tasted too strong to eat raw.
Recommended dishes: We ordered a split bowl of soup bases - one side with preserved egg (HK$45), the other hot and spicy (HK$50; for split bowls you're charged the price of one broth). The hot and spicy broth had lots of Sichuan peppercorns, which were pleasantly numbing. The preserved egg broth was  better for cooking the more subtle ingredients. We liked the contrast of two beef dishes: diced fatty beef (HK$110) was chewier with a stronger meat flavour while Wagyu #9 (referring to the fat content) beef slices were tender and mild. The goose intestines (HK$45) had a good, crisp 'bite' (don't overcook them). Assorted meatballs (shrimp, grass fish, pork and cuttlefish, HK$48) had distinct flavours and a bouncy texture. The surprise hit of the evening was  'deep-fried spoiled skin roll' (above, HK$30) -  perhaps 'spoiled' should have  been 'coiled'. These were large, delicate puffs of fried beancurd skin that softened slightly when dipped briefly in the broth.  Delicious.
What else? To end the meal, we were given free bowls of refreshing mango puree with pomelo. Private rooms are available.
