Do something different this year - pack a healthy picnic basket and take your mum out for a relaxing stroll in a country park This Sunday is Mother's Day. You can show how much you love and respect your mum by treating her to something healthy. Give those Mother's Day buffets a miss this year - we suggest a stroll or hike and a picnic in one of Hong Kong's wonderful country parks. Being outdoors is much more preferable than being stuck among hordes of people piling mounds of food on their plates and centimetres on their waistlines. Do you know that walking helps to release 'happy' brain chemicals called endorphins? Exercise also helps you to feel relaxed and less stressed plus you can burn off calories at the same time. The American Heart Association says a person weighing 68 kilograms walking at a comfortable speed of 3 kilometres per hour can burn 240 calories in an hour. Here's what you could take in a cooler bag or picnic basket: Assorted sandwiches and pita bread Fruit jelly Still or sparkling water Leafy salad (you can buy this ready washed) with low-fat dressing Remember to take some ice packs to keep everything cool and wash your hands before eating. Recipes Pita pockets (Serves 2) 2 pieces of wholewheat pita bread 1 medium ripe avocado, peeled and sliced Large handful of toasted pine nuts 2 tbsp feta cheese 8 slices of ripe tomato Cut the pita bread in half and divide the avocado, pine nuts, feta cheese and tomato equally between the two pockets and stuff. Repeat with the other pita bread. Use your imagination to come up with other fillings like lean chicken and salad. Assorted sandwiches (Serves 2) 4 slices whole wheat bread 2 tbsp low-fat cream cheese 4 slices of smoked salmon large handful chopped dill Spread the cream cheese on one of the slices of bread, top with the smoked salmon and chopped dill. Place the other slice on the top and cut into quarters. Repeat with the other two slices of bread. Very berry jelly (Serves 4) 1 tbsp vegetable gelatine 350ml apple juice 50g each strawberries, raspberries, blueberries (washed) 1 tbsp lemon juice 170ml water In a saucepan, dissolve the gelatine in the apple juice, then add the lemon juice and water. Put the pan on a medium heat and continue to stir until the mixture is boiling. Keep it boiling for one minute. Let the mixture cool. Stir the berries in the cooled jelly and divide equally between four small jelly moulds. Leave the jellies to set in the fridge for at least 1 1/2 hours.
