Snowy mooncake flavours will range from haute cuisine goose liver to local-style milk tea as exhibitors attempt to outdo each other at the 19th Trade Development Council Food Expo this month.

Besides the foie gras, mooncakes based on other high-end delicacies including black truffle, champagne and black caviar are to be offered by Taipan Bread & Cakes.

Other exhibitors will favour Japanese-influenced flavours, such as Hokkaido milk, Fuji apple and the east-meets-west green tea tiramisu. Some exhibitors will vary cake shapes and packaging at the Convention and Exhibition Centre expo from August 14 to 18.

Mooncakes will be moulded into the shape of the ever-popular Hello Kitty and Dear Daniel, in the hope of appealing to children and others.

Arome Bakery's iced mooncake is claimed to be more healthy than other types of snowy mooncake as the glutinous crust is baked instead of left raw.

But in the face of rising production costs, mooncake prices are also going up.
