1. The Fillo Factory makes spelt filo dough sheets that are pliable if properly thawed (in the fridge). Because spelt has a distinctive flavour, this filo should be used only in savoury preparations. 3. Le Rubis chocolate raspberry cake (HK$34), sold at the Salon de The Joel Robuchon (tel: 2166 9088) in The Landmark, Central, is almost too pretty to eat. It's composed of layers of chocolate cake and light, creamy raspberry and milk-chocolate mousses.
