Sushi Qube - Raw talent visible in artistic presentation

FARE Japanese. Almost everything on the menu is raw. AMBIENCE Ginza-style dining for a maximum of 10 people, with seats lined up at the sushi counter. Floor to ceiling windows and walls lined with sake and shochu bottles. COST Sushi and sashimi from HK$60 to HK$150 per piece. Sets from HK$350 for assorted sushi to HK$1,800 for the Sushi Qube set. Lunch sets are available from HK$250 to HK$350. WHO TO BRING One person, as the restaurant is so small; they must love sushi as there is little else available. TURN-ONS Everything was fresh and prepared in front of us by the friendly team of chefs headed by the expert Taisuke Sato. The Sushi Qube set gives you a taste of at least 20 types of artistically presented sushi and sashimi, including flat fish, wild snapper, sea urchin, yellow jack and abalone. The toro, which melted in the mouth like butter, was a high point, as was the plate of three prawns - angel, blue and sweet. Eating one after the other highlighted their delicate individual tastes. The miso soup to end the set was a welcome dose of something warm and cooked. Waiting staff and chefs are happy to answer questions and guide you through the dining process. TURN-OFFS The staff should have warned us about the size of the set as it was too big to finish. The sushi is expensive, but some diners sit down for just a couple of pieces of their favourite morsels for a quick snack. DRINKS A good selection of sake and shochu, including limited edition varieties, starting at about HK$1,000 per bottle.
