Italian Antonio Acone is the conceptual brains behind Osteria Ristorante Italiano, the Holiday Inn Golden Mile's latest casual dining venue. He has more than 20 years of experience in the food and beverage industry, including as a restaurateur for Ritz-Carlton hotels in Atlanta and Shanghai, Rome's famous Teatro Centrale and the 100-year-old family-owned Caf? Napoli in New York. He has created dishes for Hollywood stars Arnold Schwarzenegger, Meg Ryan and John Travolta. He came to Hong Kong in 2007 to open the Watermark Restaurant before creating the concept behind Osteria. Working alongside him is head chef Michele Camolei, from Liguria in northern Italy. The two chefs have compiled a menu that offers diners a taste of regional Italian cuisines. Signature dishes include beef carpaccio with homemade ricotta cheese and rocket salad, Ligurian octopus salad with green beans and basil pesto, mezze maniche alla carbonara(short tube pasta with pork cheek and egg), carnaroli risotto Milan-style with gold saffron, and traditional tiramisu made with Lavazza espresso. 'I'm quite creative and very interested in developing new recipes and techniques,' Camolei said. 'It's important to understand modern food trends while remaining respectful to Italian traditions.' After graduating from hotel and restaurant school Scuola Alberghiera Statale 'G. Casini' Lerici in La Spezia in 1994, Camolei landed his first job working with prominent chef Gennaro Contaldo in Antonio Carluccio's Neal Street Restaurant in London. As Camolei is fluent in Italian, English, (Castilian) Spanish, Catalan, German, French and Japanese, he was able to travel the world to perfect his culinary skills, including as chef de partie and sous chef in Marseille; a restaurant in his hometown La Spezia, Tramonti in Barcelona; and Amadeo in Munich. In 2005, he joined the prestigious Sadler in Tokyo as chef de partie under the tutelage of Claudio Sadler. But it was in 2007, during his time at Restaurant Sant Pau, when his skills helped earn the Tokyo branch two coveted Michelin stars. Last year, Camolei participated in the Tokyo Armani Ristorante opening, which brought together Hollywood celebrities and Giorgio Armani himself. He then had the opportunity to work alongside chef patron Enrico Derflingher - once the personal chef to Prince Charles and the late Princess Diana - at Officina di Enrico.
