It's widely believed that cows have four stomachs. In reality, they have one stomach with four digestive chambers, with the linings of three long appreciated as food by the Chinese, Italians and French, among others. Two types of tripe are readily available in Hong Kong: honeycomb (which looks like its name) and grass tripe, which resembles carpet. When prepared well, tripe has a distinctive flavour, with the honeycomb type being more robust than carpet tripe. Curry tripe with white radish is a clever way of turning inexpensive ingredients into a flavourful dish. The best wine with it can slide either over or under the curry flavours and the base notes of the tripe. Farnese Montepulciano d'Abruzzo, Casale Vecchio 2007, Abruzzo, Italy There are hundreds of delicious Italian wines, and this one, from the beautiful Abruzzo area, is not just delicious, it's also stunning value. It has whiffs of Italian flair, but the soft, velvety wine can also cross cultural boundaries. When paired with curried tripe with white radish, the Montepulciano layers well above the tripe, setting an aromatic height together with the heady curry. The wine's consistent, velvety texture and rich fruit is broken and highlighted by the curry-infused, juicy radish. It goes well with anything that has curry in it. Available for HK$140 from Valdivia (tel: 2555 7431) Fontanafredda Gavi di Gavi, Le Selezioni 2007, Piedmont, Italy If your curry sauce is quite fluid, this Gavi di Gavi is perfect, with the wine's fruit flavours as bright as the lemon yellow of the curry. It's one of the more reliable wines in Hong Kong. The minerally and caressing flavours are a perfect match with the tripe and the high notes of the curry. Available for HK$165 from Castello del Vino (tel: 2866 0587) By Farr Viognier 2004, Geelong, Australia The first two wines layer themselves above the curry, but this viognier slides under it, giving the pairing extra depth and a larger flavour platform. Made by Australian winemaker Gary Farr, this wine has a lot going for it, with great complexity yet easy to like.
